The Cupcake Collection was born in Christchurch in 2008 when Fiona and her mother decided to combine their talent for baking with their love of pretty things to produce a range of unique little treats.
At first, they sold their cakes at weekend markets but what started as a hobby soon turned to more. After demand took off, and every second customer asked when they were opening a shop, Fiona decided to take the plunge and do just that. She envisaged a vintage-style cupcakery, where customers could indulge in a small treat over tea or coffee in china cups, or take away a beautifully wrapped box for later on.
The Beckenham shop was an immediate success, and soon grew into a busy cafe, offering a large range of cupcakes and cakes, savoury nibbles, all baked and decorated daily.
Meanwhile, back at the Riccarton Bush market, she struck up a friendship with Jeanie, who was making and selling her gorgeous range of iced cookies. The girls recognised each other as kindred spirits who shared a love of all things beautiful and delightful to the eye, as well as to the tastebuds. On those mornings at the markets, they shared their dreams and devised a plan to go into business together, turning The Cupcake Collection into a partnership.
While the Beckenham cafe thrived, the girls determined to do what many people said couldn’t be done – open a vintage-inspired, character-filled, cupcakery right in the middle of a modern shopping mall filled with chain stores.
The Westfield Riccarton branch of The Cupcake Collection opened in October 2010, a few weeks later than planned thanks to the first Christchurch earthquake which struck days before the original opening date.
A few big shakes and several thousand little ones later, the two shops are thriving, providing Cantabrians with some delicious stress relief, as well as catering to all kinds of special celebrations from weddings to office shouts and lovely afternoon teas.
Fiona and Jeanie continue to come up with beautiful new creations from small cupcakes and exquisite cookies, to larger cakes for grand occasions. They love to work with clients to create custom solutions for their needs, whether they be small family affairs or large corporate events.
Every cake is made on the premises from fresh ingredients. Decorations are carefully handmade, allowing The Cupcake Collection to produce a unique range that really is something special.
